Coriander & Lemon Rice

This is my elaborated take on a rice pilaf packet that is very popular where I grew up. It is easy to replicate the rice by using garlic, stock, butter and oil but adding fresh herbs and lemon juice makes it creamy and addictive.

Coriander and Lemon Rice

This rice dish is creamy and rich and can be paired with almost any main.

Ingredients

  • 1 cup rice (200 grams)
  • 2 1/8 cup water (500 ml)
  • 1 chicken (or veggie) stock cube
  • 1 smashed garlic clove (or two good pinches garlic powder)
  • 1 Tbsp. EVOO1 Tbsp. (15 grams) butter
  • Generous handful of coriander chopped1/4 lemon or lime

Instructions

  1. In a pot mix rice with oil then add the water, butter, stock cube and garlic.
  2. Bring to a boil then cover and simmer on very low for 15 minutes stirring occasionally. It should have a creamy risotto consistency. 
  3. Take off heat, stir in fresh coriander and squeeze of lemon then cover for another two minutes. 
  4. Serve hot.
