Miso, Soy and Buttered Sweetheart Cabbage

When my kids fall in love with and devour certain foods like say mass amounts of strawberries in one sitting I like to call them "Strawberry Heads". That strawberry for me is cabbage. Basically what I'm getting at here is that I am a total and utter Cabbage Head. It's always in my fridge, lasts forever, it's an awesome lettuce replacement, I love it boiled, pickled, sautéed, fried, grilled, raw, in soups, salads, wilted...I just freaking love cabbage.

I am also addicted to soy sauce and butter. Next time you make some sticky rice throw a large chunk of butter and some soy sauce in it and basically....you are very welcome. It's amazing. Soy, miso, butter and cabbage sautéed together is crunchy, soft and rich. Throw an egg on top and let the yolk add to the luxury....it's delicious. You just might become a cabbage head soon too.

Miso, Soy & Buttered Sweetheart Cabbage with a Fried Egg

Ingredients

  • 1 Small sweetheart cabbage (or Savoy/white) sliced thinly
  • 1 Garlic clove minced
  • 1 Tablespoon light soy sauce
  • 1 Tablespoon Veg Oil
  • 1/2 Teaspoon White Miso Paste
  • 2 Tablespoon Butter (35 grams)
  • Coriander and spring onion, chilli oil &  vinegar to garnish
  • 2 Fried eggs ( optional) 

Instructions

  1. In a large frying pan add the veg oil on medium high add the garlic and toss for a few seconds, add the cabbage and toss constantly cooking until it wilts down and softens. Season. 
  2. Whisk the miso and soy together in a small bowl. 
  3. Add the butter to pan and toss to melt then finish with the miso/soy mix tossing. 
  4. Serve with garnished herbs, perhaps a sprinkle of vinegar and chilli oil and a fried egg on top.
